Hopi Red Dye Amaranth grow tall, sturdy plants with purple green leaves that mature to a deep purple and long purple flower tassels. Not only ornamental, amaranth is also edible. The young leaves can be eaten raw, while the mature leaves are better cooked. The cooked amaranth grains can be used in soups, stews, or raw grains ground into flour for baking. Traditionally used as a red food dye. Plus, the stunning flowers make an excellent cut flower for any arrangement.
