Sunchoke, also known as Jerusalem Artichoke are the tubers of sunflower species native to North America. It has a sweet and nutty, artichoke-like flavour that can be used in the same ways as a potato. Plants grow as tall as 6 feet with small, yellow flowers that blooms in early fall. A mix of purple and white varieties. Perennial, hardy to zone 3. Package contains ~1 lb of tubers.
